Domaine des Craies
Domaine des Craies is a 13-hectare family estate passed down from father to daughter for more than 5 generations, in Lignorelles in the heart of the Chablis vineyards. Led by Alicia and Aurélie and moving towards more environmentally friendly viticulture, they use organic methods and biocontrol products such as essential oils.

Wine character: floral and yellow fruit aromas. The palate is silky, delicious with a lovely freshness and notes of grapefruit. The finish is distinctive, revealing a beautiful mineral length.

Domaine Jean Claude Martin
Domaine Jean Claude Martin is first and foremost a family story. Frédéric and Claudia inherited it from their parents. Frédéric is the man of the land. He watches over his vines, lavishes his care on them. Claudia, his sister, is at work in the Domaine's winery. Claudia and Frédéric are determined to move towards cleaner and more environmentally friendly viticulture. To do this, they are accompanied by their father, Jean-Claude. Domaine Olivier Morin
In 1992, Olivier Morin decided to take over the family company after a previous life in music. The desire to perpetuate the work of his ancestors, who have been winemakers in Chitry since the 17th century, motivated him to return to his roots. Morin’s 14 hectares of vines are farmed thoughtfully and sustainably. He uses natural grass cover, no herbicides, organic compost, and green harvests to ensure that the best quality fruit. Since 2020, all vineyards have been farmed organically.

Grape: 100% Pinot Noir
Wine character: The wine is aged with a blend of several vintages using the solera process (the older vintage is kept in barrels, and each time a portion of the wine is removed for bottling, it is replaced with an equal amount of younger wine). This wine is bottled unfiltered. mixed cherries and raspberries, along with light spices and red currant.
Tasting: ageing potential of 3 years, goes perfectly with BBQ, salads, red/white meats and vegetable pies.
