- Rarity of wines. Burgundy only occupies 3% of French vineyards.

- All wines only come from winegrowers (people who own & work their vines, make the wine, bottle it, take care of winemaking, marketing and sales)
- No grapes are purchased from other estates/cooperatives, and all the grapes come from one and the same winegrower.
- The winemaker has total control over winemaking and quality.
- Each estate is a small family estate and is passed down from generation to generation.

Born and raised in between Paris and Burgundy, Sophie always had a passion for food & beverages, mainly wine!
After graduating from Vatel Paris with a Bachelor in hospitality management, Sophie had the opportunity to work with Michelin Starred teams at the Four Seasons Hotel George V, the Alain Ducasse at the Plaza Athenee and the Eiffel Tower in Paris.
In 2010, Sophie moved to Los Angeles to pursue her MBA in hospitality management. After graduating, she was managing two Food and Beverage outlets at the Peninsula Beverly Hills.
She joined Ink, with Top Chef winner & owner, Michael Voltaggio.
During those years, she was one of the "30 under 30" nominees for standout restaurant professionals in Los Angeles .
She also got her court of master sommelier certification before taking over Spring in downtown Los Angeles, with another Michelin starred Chef.
She recently moved to El Salvador with her husband and kids and is now importing and distributing fine French wines in the country.
